IT’S NEVER TOO LATE FOR A DELICIOUS PUMPKIN PIE! This is a completely vegan, sugar and gluten free recipe to perfect your afternoon! It's my third year living in America and finally the year I found the beauty of pumpkin flavor – and there’s no turning back for me. Please fill my house with pumpkin candles, soap and pies! One benefit of living here is that the nuts and seeds are crazy affordable compared to what they cost back in Finland, yay! It was on my heart for a long while to try something new and as Thanksgiving came by I decided to try a paleo pumpkin pie! My housemates gave their approval! crust 1 cup pecans ½ cup soaked dates (at least 4 hours) ½ soaked raisins (at least 4 hours) ½ cup quick oats ½ cup coconut flakes a pinch of salt Blend the pecans, soaked dates and raisins together until formed. Add oats and coconut flakes. Spread on a cake tin and press evenly. Place the crust in the freezer while you prepare the filing. filling 1 ½ cups of soaked cashews (at least 4 hours, preferably overnight) 2 cups of pumpkin puree 1 cup of soaked dates 1/3 cup of melted coconut oil ½ tea spoon cinnamon ½ tea spoon nutmeg 1 tea spoon vanilla Blend the soaked cashews until smooth. Add other ingredients and blend (probably need to use a spoon to help!). Pour the filling onto the chilled base and decorate the top as you like the best! Place the cake in the freezer for four hours to set before eating! You may also freeze the pie completely and eat it another time. (I did that!) I had a little bit extra filling left and I just enjoyed it as a dessert itself the next day. ;) Much love, Heidi

– are uncomfortable to be around but they still are the people you want to hang out with! Have you ever met a person who oh-so annoys you with their simple excitement and love for the things of the Kingdom of God and yet you feel weirdly attracted to them? I have! They may seem foolish in the eyes of the world but I don’t think God gets embarrassed by their passion. Consider how foolish Noah looked like when God gave him a Word and he began to live by it with unshakable faith. Paul said it quite well, “If we have hoped in Christ in this life only, we are of all men most to be pitied.” And that’s what makes faith so exciting. We might never see the full reward of it on this side of time yet it’s still worth it.
Great faith either offends you or it awakens your heart to what’s possible. It either hardens you or it stirs you up with an unquenchable longing for the more of Him. Jesus himself marveled at people who had great faith (Matt 8:10)! This really astonishes me: God can be amazed by our faith..? I desire to be a person whose faith brings a sweet shaking into peoples lives in order for their hearts to be revealed and restored. Let's think about it, for instance, why would I ever be offended by someone's joy? Sounds funny when you write it down but that actually happens! The elder brother is offended by the relationship the younger brother has with the Father even though he himself has the same access to him as well! I think faith only offends us when it confronts our comfort way of thinking and living, requiring a real action and repentance (changing the way I think). Faith moves the mountains through relationship. With God everything is possible! Wait, who said that? Jesus did. Isn’t that crazy or what! Could He really mean that ALL THINGS ARE POSSIBLE TO HIM WHO BELIEVES? —-- That’s just too radical. I’ve heard many stories when it didn’t happen like that so I should perhaps lower my expectations to my current experience? Perhaps. But it would be ridiculous in the eyes of faith. I've been recently reminded of the day I was sitting in a chair at our school's retreat over two years ago as an older student began to declare God's love over me. I undervalued her words in my heart in that moment, thinking: "I know this already... Tell me something new." (Ouch!) Yet a bit after that, the Father's LOVE bypassed my reasoning, hit my heart and I bursted out laughing. WHAT IS THIS LOVE? We were created to experience the Father's love with every fibre of our being. Theology is not just for the mind — has not God made foolish the wisdom of this world (1 Cor 1:20)? Theology is also for the heart to feel, experience and live out. I hear deep within me how the Father is asking me to embrace the mystery of His relentless affection, Christ' resurrection and the gift of adoption. May this blog be all about awe and wonder in everyday life. I want to celebrate beauty, have fun in cooking & wonder in discovering the depths of God! |
