IT’S NEVER TOO LATE FOR A DELICIOUS PUMPKIN PIE! This is a completely vegan, sugar and gluten free recipe to perfect your afternoon! It's my third year living in America and finally the year I found the beauty of pumpkin flavor – and there’s no turning back for me. Please fill my house with pumpkin candles, soap and pies! One benefit of living here is that the nuts and seeds are crazy affordable compared to what they cost back in Finland, yay! It was on my heart for a long while to try something new and as Thanksgiving came by I decided to try a paleo pumpkin pie! My housemates gave their approval! crust 1 cup pecans ½ cup soaked dates (at least 4 hours) ½ soaked raisins (at least 4 hours) ½ cup quick oats ½ cup coconut flakes a pinch of salt Blend the pecans, soaked dates and raisins together until formed. Add oats and coconut flakes. Spread on a cake tin and press evenly. Place the crust in the freezer while you prepare the filing. filling 1 ½ cups of soaked cashews (at least 4 hours, preferably overnight) 2 cups of pumpkin puree 1 cup of soaked dates 1/3 cup of melted coconut oil ½ tea spoon cinnamon ½ tea spoon nutmeg 1 tea spoon vanilla Blend the soaked cashews until smooth. Add other ingredients and blend (probably need to use a spoon to help!). Pour the filling onto the chilled base and decorate the top as you like the best! Place the cake in the freezer for four hours to set before eating! You may also freeze the pie completely and eat it another time. (I did that!) I had a little bit extra filling left and I just enjoyed it as a dessert itself the next day. ;) Much love, Heidi

Have you ever met a person who oh-so annoys you with their simple excitement and love for the things of the Kingdom of God and yet you feel weirdly attracted to them? I have! They may seem foolish in the eyes of the world but I don’t think God gets embarrassed by their passion. Consider how foolish Noah looked like when God gave him a Word and he began to live by it with unshakable faith. Paul said it quite well, “If we have hoped in Christ in this life only, we are of all men most to be pitied.” And that’s what makes faith so exciting. We might never see the full reward of it on this side of time yet it’s still worth it.
Great faith either offends you or it awakens your heart to what’s possible. It either hardens you or it stirs you up with an unquenchable longing for the more of Him. Jesus himself marveled at people who had great faith (Matt 8:10)! This really astonishes me: God can be amazed by our faith..? I desire to be a person whose faith brings a sweet shaking into peoples lives in order for their hearts to be revealed and restored. Let's think about it, for instance, why would I ever be offended by someone's joy? Sounds funny when you write it down but that actually happens! The elder brother is offended by the relationship the younger brother has with the Father even though he himself has the same access to him as well! I think faith only offends us when it confronts our comfort way of thinking and living, requiring a real action and repentance (changing the way I think). Faith moves the mountains through relationship. With God everything is possible! Wait, who said that? Jesus did. Isn’t that crazy or what! Could He really mean that ALL THINGS ARE POSSIBLE TO HIM WHO BELIEVES? —-- That’s just too radical. I’ve heard many stories when it didn’t happen like that so I should perhaps lower my expectations to my current experience? Perhaps. But it would be ridiculous in the eyes of faith. I've been recently reminded of the day I was sitting in a chair at our school's retreat over two years ago as an older student began to declare God's love over me. I undervalued her words in my heart in that moment, thinking: "I know this already... Tell me something new." (Ouch!) Yet a bit after that, the Father's LOVE bypassed my reasoning, hit my heart and I bursted out laughing. WHAT IS THIS LOVE? We were created to experience the Father's love with every fibre of our being. Theology is not just for the mind — has not God made foolish the wisdom of this world (1 Cor 1:20)? Theology is also for the heart to feel, experience and live out. I hear deep within me how the Father is asking me to embrace the mystery of His relentless affection, Christ' resurrection and the gift of adoption. May this blog be all about awe and wonder in everyday life. I want to celebrate beauty, have fun in cooking & wonder in discovering the depths of God! Vain Todellinen Rakkaus saa ihmisen sukeltamaan syvyyksiin, kulkemaan läpi autiomaan, seilaamaan läpi valtamerten ja uskomaan siihen, että HÄN ON. Hän on vielä enemmän. Hän on kaiken uhrauksen arvoinen. Ystäväni, luulen, että joskus unohdamme opetuksessamme Jeesuksen opetuslapseudesta ja seuraamisesta rakkauden. Minut on kasvatettu tuntemaan lain paino: sinä kuuntelet ja sinä tottelet. Piste. Tiedän varsin hyvin sen olevan totta: sain kuolla ja maailman orjuudesta antautua Kristukselle ja tulla hänen orjakseen, palvelijakseen –– ja että jokaisen meistä täytyy kulkea Jumalan valtakuntaan kapeasta portista, jonka suulla riisutaan kaikki, sillä pelastus on yksin armosta uskon kautta. Ei ole toista tietä, ja se joka niin väittääkin on valehtelija, eikä tunnusta Jeesusta Herraksi. Kuitenkin, tahdon jakaa sinulle seuraavaa: suuren salaisuuden Jumalan rakkaudesta. Totuus ei lopu tähän, vaan se vain kasvaa ja syvenee. Taivaallinen Isämme tahtoo palauttaa tuhlaajapojan paikalleen, vaikka poika tiesi, ettei enää olisi ollut arvollinen kutsuttavaksi hänen pojakseen. Jumala on antanut meille ihmeellisen armonsa kautta lapsen aseman, eikä Jeesus häpeä kutsua meitä veljikseen (Hepr. 2:11)! Tervetuloa Jumalan valtakuntaan, jonka kulttuuri ja toimintaperjaatteet eivät löydä maallista vastinetta. Jeesuksen seuraaminen näyttää ulkopuolisen silmin täysin erilaiselta kuin valtakunnan sisältä tarkasteltuna. Teurasuhria ja ruokauhria sinä et halua – korvani sinä avasit – polttouhria ja syntiuhria sinä et vaadi. Sinun tahtosi, Jumala, minä teen mielelläni, ja sinun opetuksesi on sisimmässäni. (Psalmi 40:7,9)
Tiedän, että sinäkin tunnet uhrauksen painon. Se saa olon epävarmaksi ja epämukavaksi, kunnes astumme siihen sisälle ja päätämme seurata Kutsujaa. Raamattu sanoo, että Jeesus kärsi ristin edessään olevan ilon vuoksi. (Hepr 12:2) Jeesus kärsi ristin kuoleman — edessään olevan ilon tähden. Välillä rakkaus sattuu syvältä, eikä se ole helppoa, mutta se antaa meille suuremman ilon kuin kukaan voi saada "viinin tai viljan runsaudesta". Instant-gratification-kulttuurissa voi välillä olla vaikeaa käsittää, että meidät on kutsuttu keräämään aarteita taivaisiin. Tiedämme, että tämä tie vie yltäkylläiseen ja rikkaaseen elämään Kuninkaan lapsina. Voit varmaan jo nähdä, mistä puhun? Totuus on, että sydämeni rakastaa saada kulkea hänen tiensä. Se on täyttymyksen ja lupausten tie. Meidän Jumalamme itse antoi Jeesuksessa täydellisen esimerkin rakkaudesta, uhraamisesta, nöyryydestä ja kuuliaisuudesta. Vain hullu rakentaa elämänsä sille, mikä ruostuu (Luuk. 12:15). Koin kerran hiljaisen kysymyksen hengessäni: Heidi, tahdotko seurata minua tässä? ja tuossa hetkessä tiesin, mitä vastaus KYLLÄ tarkoittaisi. Kyyneleet valuivat poskilleni kun ymmärsin kysymyksen vaatimuksen, joka oli liian suuri minun yksin täyttää. Ihmettelin, miten Jumala, vaikka tiesi tämän varsin hyvin, silti tahtoi kysyä sitä minulta. Miten oli mahdollista, että hän tahtoi antaa minulle rakkauden ja voiman seurata häntä, jotta voisi palkita minut siitä, että kuljen hänen voimassaan? Vastaan yhä tänäkin päivänä: Jeesus, sinä tiedät, että rakastan sinua. Sinä tiedät, miten tuo rakkaus merkitsee minut ja mitä se vaatii ja saa minut tekemään. Annan kaikkeni, jotta voisin olla lähellä sinua. Jeesus, minä tahdon koko sydämestäni seurata sinua.

Tiiätkö, viime kesänä pohdin Turussa yhdessä vaiheessa sitä, et hei Jeesus, mihin mun rohkeus oikein valuu? Ja tajusin, et aaah, mun pitää vaan mennä takasin sille paikalle, mistä sen sainkin! So good. Rohkeus, jossa elän, ei ole mun omaa, vaan oikeesti tosi yliluonnollista. Armoa! Muistan, miten keväällä mietin, mitä kaikkia mahdollisuuksia mulla on edessä Suomessa ja yllättäen totuus iski. Muistan surreeni ääneen: "God, I CAN DO NOTHING... I can do nothing! I can do NOTHING!" ja yllättäen hän täydentää lauseen mielessäni: "The Son can do nothing of himself. He does only what he sees the Father doing. Whatever the Father does, the Son also does." Johannes 5:19. Rohkeus, missä elän, syntyy läheisyydestä Jeesukseen. Hän on täydellinen rakkaus ja mitä enemmän tuo rakkaus saa täyttää ja ohjata jokaista ajatustani, sitä vähemmän sydämessäni on tilaa pelolle. Jeesus ei antanut minulle pelon henkeä, vaan voiman, rakkauden ja terveen harkinnan hengen! (1 TIm 1:7) Johdan täällä Reddingissä yhtä evankeliointi-tiimiä kaverini kanssa ja ihmisiä kohdatessani olen huomannut, että minua auttaa, kun annan sydämeni täyttyä Isän ajatuksista lapsiaan kohtaan. Miten kohtaisin kauan kadoksissa olleen veljeni? Muistutan myös itseäni siitä, että sanani ovat aina täynnä ELÄMÄÄ ja TOIVOA Jumalasta kaukana oleville. Jumalan sana minun suussani on AINA, AINA, AINA voimallinen ja saa paljon aikaan. Hän on uskollinen sanalleen. Kuinka moni sydän vain odottaa sitä, että joku tulee ja kertoo, että Taivaan Isä rakastaa häntä ihan täydellisesti ja haluaa antaa hänen syntinsä anteeksi? Meille on annettu ihan mykistyttävän ihmeellinen kutsu ja auktoriteetti demonstroida Jumalan rakkautta laskemalla kädet sairaiden päälle, julistaa terveyttä ihmisten elämiin, nähdä heidän tulevan terveiksi ja johdattaa heidät sisälle Valtakuntaan. "Sillä Isä rakastaa Poikaa ja näyttää hänelle kaikki, mitä hän itse tekee; ja hän on näyttävä hänelle suurempia tekoja kuin nämä, niin että te ihmettelette." (Johannes 5:20) ”Niin kuin Isä on lähettänyt minut, niin lähetän minäkin teidät.” (Johannes 20:21) Jos haluaa kasvaa esimerkiksi juuri manitsemassani evankelioinnissa, on tosi rohkaisevaa kävellä jonkun sellaisen kanssa, joka on jo pidemmällä kuin itse! Näissä hetkissä saa lainata sen toisen rohkeutta ja venyttää omaa mukavuusaluettaan turvallisesti. Mun omassa evankeliointi-tiimissä on muutama ujo kaveri ja sitten pari kokeneempaa tyyppiä. Kaikkein parasta on kävellä yhtä matkaa sen aremman ystävän kanssa, rohkaista häntä ottamaan uusia riskejä ja seistä hänen vierellään valmiina jatkamaan siitä, mihin hän jää. Rohkeus tarttui myös opetuslapsiin, jotka he hengasivat Jeesuksen kanssa! As an artist I would still say it's at least as fulfilling, good-lookin' and definitely fun to make. First time we made this with S we laughed at the amount of cheese we put in it. Yikes, the next time I had maybe half the cheese and the pizza turned out to be great still! This goes to every adventurous soul out there!
I would suggest about 2 dl (1 cup) finely shredded cabbage and 1 dl (0,5 cup) finely shredded carrots for the crust. Mix all the ingredients in a bowl and place in the 200 celcius (400F) oven for about 15 minutes. Now you can add the toppings! I recommend tomato purée, pineapple slices, tuna fish, tomato slices, artichoke and avocado slices... And cheese! Do you like mozzarella, feta or would you prefer monterey jack? Don't forget oregano! It should look somewhat like the following: Place the masterpiece in the oven for another 15 minutes. Make sure that the cheese has melted well and gotten some color! Serve with fresh lettuce and cool drinks — YUM! What I did different from our first try is that I didn't put cheese on the bottom of the pizza (that was in the original recipe found somewhere in the internet). So first it was cheese on the bottom (on top of the cabbage crust), then the tomato purée and other toppings and then on the very top more cheese! I preferred this latter option but feel free to add as much cheese as you'd like! Here in the US pizzas are all-fulfilling. They are indeed cheesy and let me tell you, with the heavy, thick carb crust your stomach will thank you afterwards. :P Can't help kinda liking them anyways.

Unohdan videossa mainita, että "MINÄ OLEN" on tosiaan se nimi, jolla Jumala itse valitsi kutsua itseään kun Mooses kysyi Jumalalta hänen nimeään! Jos et ole vielä kauan lukenut Raamattua, niin ymmärrän jos hämmentää, että mistä ihmeestä oikein puhun! (Tsekkaa: 2 Moos. 3:14) Pieni ihmeellinen ajatus Jumalan nimestä: Jumalan nimen konsonantit JHWH tarkoittavat käännettyinä: Behold, the man, behold, the nail. Tämän sanon ilman minkäänlaista heprean kielen tuntemusta, mutta googlaamalla asiasta voi lukea kylläkseen lisää. Uskomatonta, että meidän Jumalamme nimi jo itsessään on profetia Kristuksesta! Pakko myös todeta, että on yllättävä haaste puhua suomea videolle. En kuullosta pahalta, mutta koen, että vauhdissa pitää välillä vaivalloisesti hakea sanoja ja sanamuotoja. Huomasin viime kesänä, et kaikki tuli takasin helposti ja kieli rikastui taas nopeasti, mutta joo, ainakin toistaiseksi-- koittakee kestää pientä kankeutta ja turhaa toistoa (koitan ajatella samalla) haha! My heart is filled with gratitude and joy over the things that happened during those three months that I got to stay in Finland. I think I could share 3 warm memories that come to my mind: ♥Every spontaneous worship moment with my housemate! One really sweet was when (late night after work) we randomly laid down on the floor in the corridor (the weirdest place) and began to lift up our praise to Jesus! I grin when I think of our funny worship/prophetic dances hahaha! I recommend having fun with Jesus to every Christian, serious—ly. Being childlike is perhaps more than just a cute saying :D ♥ Visiting my friend's church's summer camp. The amount of blueberries I picked up sitting in a small hummock is absurd! For some reason God led me that night to chat with those who didn't yet know Jesus. I shared the Gospel in a way I never knew I could! One girl gave her life to Jesus! ♥ When my parents came for a visit. It was so much fun to make food for them and serve them! I have missed them after being 9 months away in Cali and then the summer working in another city. There aren't measurements to rate and compare the seasons of life (simply can't do that) but there is something valuable in finding out the beauty of the "now" we are living in. This is what our lives are like: already living in Kingdom of God that is yet to come. The sometimes uncomfortable journey of living in between — from glory to glory. When you've gone too far to turn back anymore and you've got too far to go to give up either. Seasons change but He remains the same.
